Did someone say marijuana mac and cheese bites?!
Since the dawn of time humanity has relied on two things to help it survive and adapt; Cheese and Pasta.
Cheese and pasta lend their magic to many dishes but a favorite for the ages is definitely mac and cheese. How can you improve on such a classic dish you ask?
Add some cannabis (in the form of MendoLicious butter), cut the mac and cheese into bite size chunks, deep fry those puppies and you have an evolutionary accelerant. Humanity Thanks You.
Maryjane Mac and Cheese Bites
12 oz small pasta (elbow, short salad)
2 Tbls butter
2 Tbls MendoLicious butter
1/3 cup all purpose flour
1 1/2 cup milk (2% or whole – no skimping you skim-milkers!)
1 tsp prepared mustard (we like Grey Poupon because we are fancy)
3 oz cheddar cheese cubed (big handful for you non-measuring types)
3 oz jack cheese cubed
salt and pepper to taste
For the Frying
1 cup vegetable oil (regular oil NOT MendoLicious oil – you have things to do this month, right?)
1 cup flour
2 eggs lightly beaten
2 cups Panko breadcrumbs (yes, you really have to use Panko – they make all the difference and you will find them at your store if you really look – we promise.)

Cook pasta according to directions and drain. In a large saucepan melt both kinds of butter (don’t burn) and then add flour and whisk. Cook for two minutes until the mixture looks slightly browned (intensifies flavor – worth the effort) then add milk while whisking constantly (skills test! look sharp!).
The mixture should be smooth and it will begin to thicken – keep whisking and add mustard. Whisk until it is thick like chowder and then add cheese and switch to stirring with a spoon. (You cut up your cheese in advance right? You are not frantically trying to grate cheese over your saucepan while whisking, are you? )
Stir continuously over low to medium heat until the cheese melts and the mixture is smooth. Remove from heat and add pasta, salt and pepper. Stir very well.
Take a 9×13 pan (glass is best) and give it a light spray with cooking oil. Spread the mac and cheese in an even layer. Place uncovered in fridge for at least 2 hours until cold and fully set (Oh snap! You thought you were going to be eating these ASAP, didn’t you? Always read the recipe before you start, kittens!)
Get ready to fry!
gather three shallow bowls and fill with the flour, egg, and Panko crumbs in that order.
*line a cookie sheet with wax paper or parchment paper
line a second cookie sheet with paper towels
fill a deep frying pan with oil and find a metal spatula (no plastic!) – heat oil until shimmering
Remove mac and cheese from fridge and cut it like they are a pan of brownies. You should make even squares that are approx. 1″- 2″ square (the smaller the bites the crunchier) then cut them in half to make triangles.
Pry several “bites” out of the pan and do the following;
dredge in flour and shake off excess , dip in yolk , roll in Panko, ease into frying pan and brown on each side for a minute or two – watch for golden browness. When golden remove with spatula onto paper towels. REPEAT!
*if you want to make things go a bit more smoothly prep your bites and lay them on wax or parchment paper before you begin frying – they wont stick and you will be able to get them all fried up rather quickly!
Watch your oil and your temperature – don’t get too hot you sexy thing!
Sprinkle with sea salt and line up your dipping sauces – because things are about to get real!
