In this anti-gluten age our old friend the muffin is suffering from a confidence crisis. Once the epitome of a satisfying healthy snack or breakfast food (hello bran muffin from the 90’s!) muffins are now sinister cousins to the diet-killing croissant and the namesake of poorly fitting pants on zaftig women everywhere.
Poor little Muffins! Well Mary and Jane say “No more!” Here is a delightful recipe for a savory sweet muffin loaded with flavor and cannabis – put a little sunshine back into your breakfast ritual and give Miss Muffin something to smile about!
Cannabis Infused Muffins with Walnuts, Brie & Honey
1 1/2 cup all purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup whole milk
3 1/2 Tbls MendoLicious butter – softened*
2 oz soft brie cheese
2 oz (approx. 1/4 cup) toasted walnuts
2 Tbls honey
Preheat oven to 375 degrees and grease and flour a mini muffin tray.
Whisk together dry ingredients. Add in the milk and stir. Now add in the egg and stir again (You’re doing great! Keep going!) Now add in the softened MendoLicious butter and mix until batter is well-incorporated and smooth.
Add in your special ingredients; brie (rind removed!), walnuts toasted and roughly chopped (Did you forget to toast them? Do it now in a cast iron pan or your toaster oven – only takes a few minutes and the result is worth it. They burn quickly so pay attention!) and finally the honey. Stir well and then pour into the prepared pan.
Bake for 12-15 minutes – give it the ol toothpick test!
Serve warm and remember why muffins are delicious and deserve some love and attention!
*for a less potent recipe use half regular butter and half MendoLicious butter
